Tasting Notes

Red fruit meets dark fruit, great layers of cherry, blackberry and black current with hints of coco. Tobacco and spice on the nose tease the aromas. This wine has a beautiful, elegant structure and a finish that lingers. Drink now and over the next 10 years.

Food Pairing

A delicious pairing with red meats, red-sauced dishes like eggplant parmesan or herb crusted ahi tuna.

Tech Details

This Cabernet Sauvignon was sourced entirely from Rutherford in the heart of the Napa Valley. This lot was sourced from two blocks RP11A and RP11B on the eastern side of the property. RP11B is clone 15 on rootstock 1616C and RP11A is clone 15 on rootstock 101-14. The fruit was hand sorted, meticulously processed so only whole berry grapes made it into the tank. Cold soaked for 5 days before inoculating with William Selyem yeast. Auto pump-over for (max) extraction so no flavor is left behind. Skins were pressed of after 16 days in tank to capture a full bodied wine that has elegant refined, approachable tannins. Aged 6 months in 20% new and 80% 2nd and 3rd use, all French.
