Tech Details
Harvested from south-east facing vineyards in Pontassieve. Grapes are picked between the second half of September and the first half of October. The vineyards are certified organic.
Clay & limestone soil. Fermentation in stainless steel tanks at controlled temperatures. Malolactic is carried out in glass-lined cement vats. Aged for 10-12 months in glass-lined cement vats.
